How to import mp3 to iTunes audiobook format?

I have some audio books that have been downloaded in mp3 format. Can anyone tell me how to import these into iTunes 9? I have them imported as ‘Books & Spoken’ but I am interested only in adding them specifically as an Audiobook so that I may take advantage of the chapter bookmarks.
